    First brew, a success! (I think)

    You can tip the bottling bucket slightly next time you bottle. I found this helps to keep sediment out of siphon when bottling. As mention leave a little in bottle when pouring. Enjoy... :) Cheers

    So Effing Close

    My suggestions for getting gravity from carboy is to get a wine thief I finally brought one from LHBS. It takes a lot of worry out of getting sample to check gravity. I also have Speidel with a spigot that I get samples from. Have to use San Star in the spigot and cover but both methods work...

    OG is out

    Being new myself I have learned from here that you will get better results if you let the yeast clean up. I now let my brews sit for at least two weeks in primary then take a few gravity readings to ensure that it is finish. My first brew was a Honey Wheat as soon as gravity stayed the same...

    airlock exploding off top of carboy.

    Blow off tube will help avoid that in the future. If you don't have a fridge or swap cooler then maybe using a cooler that your carboy can fit in and use cool water to get temp under control.

    You can also use brew software some are free and others pay. Put your recipes in and see where OG and FG should come close too. Then you can also play around with ingredients to modify to your taste. Cheers
