    It sounds like it varies quite a bit based on the water. As Gwitz mentioned, you can test the viability with pH strips. However, other members here have reported batches lasting for years and remaining under pH 3.

    Auto-Siphon Fail ... am I F'd?

    How did you sanitize the siphon and tubing? I sanitize mine by siphoning some star san right before I use it. That also functions as a test to make sure it's working properly.

    Not enough sparge water?

    Mashing 20.4 lbs at 1.5 qts/lb means your mash of 7.65 gal will give you 5.1 gallons into the kettle. Sparging with 2.2 gallons brings you up to 7.3 gallons in the kettle. If you want to sparge with more water, you'll need to boil longer to get the water volume back down.

    Tips for making a hoppy-yet-very-low-gravity ale

    I'm late to the party, and I don't have a recipe, but this made me think of Levitation Ale from Stone. It's 4.4%, so a little stronger than you had in mind, but it's pretty flavorful for being so light. I imagine a recipe could be found for it.

    5 gallon All Grain boil volume

    There's $31 for the copper alone. Throw in a few bucks for a brass fitting or two, some clamps, and a little bit of tubing, and it's right in the neighborhood of what I paid for mine from my LHBS.

    These days, it's pretty difficult to buy the parts for an immersion chiller for much less than they cost pre-built. I was going to build one, but after I realized I was just going to break even (at best), I bought one pre-built. Copper is just too expensive.
