    Transferring Cider to Secondary Before 1.000 Gravity?

    I did one of mine at 1.020 to get it off of the lees and start adding some additional flavors with no problems. I plan stopping it right at 1.000, back sweetening, bottle carbing then stove top pasteurization.

    Well, the Wal-Mart brand came out very bland, I'm adding some tannins, acid blend and some jarred strawberries in syrup (40 additional grams of sugar) in my secondary to try to get something palatable out of it . We shall see.

    It's my new brother in law I'm getting into cider making. He lives in Minneapolis and has access to all kinds of apples including crab and one undetermined tree growing in his own yard that he says is cider apples. I'll have to update when I find out exactly what. He's on a flight home as we speak.

    Or just someone to tell me 10 grams of sugar raise the gravity per gallon. I want to add strawberries in the secondary to a crappy store bought apple juice I'm attempting a drinkable cider from. Already have plans for tannin and acid blend to save this toilet water.

    Yeast started working within 6 hours or so and it's been bubbling away for 4 days now with almost zero krausen. As soon as it stops, I'll update again with some numbers when I pump to secondary.

    Waiting on my first batches to go to secondary. But since you asked, I found a store that gets scratch & dent and sells them for fifty cents a piece. So right now I'm digging some Dales Pale Ale and Abita Peach Lager. Gotta love the free bottles too ;)
