    Sweet Stout Deception Cream Stout

Do a search for adding coffee to a brew, I know there are at least a few thread on the hows and why already in progress. I might suggest you brew a batch of this as it is written before you do that though, as the coffee flavor from the grain is already pretty prominent on its own.

    Sweet Stout Deception Cream Stout

Just bottled this one up, and I'm trying to forget about it for a month or two (just in time for October fun!). I am REALLY looking forward to it, especially after the flavors I tasted in the sampling round out and mesh a bit. The coffee flavor is definitely the boldest in the batch, with a...

    Never Bottled before.. Quick question.

5gal=640 fluid oz. 640 fl.oz. / 22 oz = 29 bottles (approximate) accounting for some loss to the trub-monster, and 28 bottles aught to do it.

I have stopped adding priming sugar when I bottle

I prefer a lot of my beers after they have released a lot of the gas and also moved a bit closer to room temperature. The flavors seem to come out more. Perhaps I'll give this a try in the future.

Trademark Conflict with Republic of Texas Brewery :(

In England you can still go by the building that used to be the Texas Embassy. Since Republic of Texas is wrapped up, maybe something in the neighborhood of Texas Embassy Brewery would have done? Either way, congratulations on the identity!

    Summit Hefe Yeast

That might be a no, but nothing saying you can't try it! Mix up some wheat starter and give it a go. Just start small and work your way up to a good pitchable volume.

question about reusing old beer bottles

Sounds like a great cache of booty, but personally I would give them a pass. But that's just me.

New member and 'did I ruin it' all in one!

"Without a doubt the single and most dramatically significant thing that can spoil the taste of your beer is...worrying." -Charlie Papazian Welcome to HBT, MrWiggles. Note: I could not write the previous line with a straight face.

Am I putting enough water in my brew?

Use your hydrometer. It should come with instructions on proper use. Read them, learn them, love them, live them. If you don't have a hydrometer, get one. They are inexpensive and your best friend. A lot of recipes will give an approximate original gravity (if you don't know how to really...

    Apple and Blackcurrant

How long has this aged? Ciders can take a good long while to mature well, especially if they are real dry. I would probably bottle it up and forget about it until November or December and see how it tastes then. The apple/black currant sure SOUNDS like it should taste good.

Am I putting enough water in my brew?

A lot of people here shoot for 5.5 to 6 gal pre boil volume to account for boil off, tastings, gravity samples, and whatever is lost to the trub-demons-down-below in your fermentor so they can get a full 5 gal out of the final bottling/kegging. Results may vary in your setup, you'll have to...

Dry "hopping" tea... need to sterilize?

IIRC, the caffeine in black teas inhibits the growth of bacteria, so a sanitary package of loose tea (such as foil packaging) should be clean. Just to be safe though, you could boil the tea in a volume of water for approx. 10 minutes to sanitize, chill in a sanitary container, and pour the...

    NOOB question on priming sugar

Boil and put in your bottling bucket and rack on top of that. Adding it dry will require stirring which may contribute to later oxidation of your brew in the bottle. Racking on top of a wet mixture will blend in the sugar as it flows from the siphon keeping agitation and additional aeration to...

    Casters for a brew rig

Depends on your floor conditions too. Stay away from hard/soft rubber and urethane treads for the reason stated above. I would suggest a glass-filled nylon tread as it is strong, lightweight, and waterproof. Phenolic is also an option. Metal wheels would be cheaper to buy, but they are noisy on...
