    I'd do something 1.050 or below, pitch dry yeast or make a big starter for your white labs, keep at 68 for 3 days, then let it go, up to 75, check at a week if you are around 1.010 or below pull it out and bottle, then you've got two weeks in bottles and that's probably enough for it to be okay...

    First brew in bottles!

    well the corn sugar will be fully fermented out in bottles, so any sweetness from that will be gone if that was what was causing it to be too sweet. Also the carbonation will create carbonic acid when consumed, balancing the sweetness a little bit. In short, it will probably be good.

    Anybody fermented with Wyeast 3787 at 72-74*? If so, how did it turn out? I did the NB Patersbier kit at that ferm temp, samples have been good and haven't been overwhelmed by any phenol flavors but its hard to judge at room temp.
