    I made a tank 7 clone of sorts (not a kit) a year or so ago. I used white labs 565, saison I. It turned out good. That said, I have read that Belgian Ardennes will get you closest. I have also read good things about belle saison but haven't used it.

    Can anyone clarify how "Steep" works on BeerSmith?

    Looking at the recipe, those steep hops have to be post boil kettle hopstand additions. The 0 minute would be just after flameout and the 30 min would be 30 min into the hopstand ( maybe whirlpooling at 170deg?) there's also a 0 day dry hop which I'm thinking might be keg hops

    If you use fresh zested orange peel, making sure not to get any of the white pith it will be very citrusy and can sometimes be overwhelming. I wouldn't use anymore than .75 oz in the last five minutes of the boil. I tend to stick with the bitter dried peel.
