    If you check my videos, there is both foam and fizz. Sometimes you can see the fizz with the little tiny bubbles raising to the surface after shaking. That said, no my wine is not fizzy and doesn't have a head... it just happens if you shake it, again, it's in the video.

    Very true, just for fun I shake other things to compare, it doesn't do as much foam/bubbles as wine but still.

    No, not using too much metabisulphate, just the regular amount package that comes with the kit. No it doesn't have any vinegar flavor, like I said before, wine taste fine, it's just a curiosity why there is so much foam/bubble.

    Bottling done, gravity is 0.994 after 24 days. So it dropped 0.002 but the reading is not digital, it can be plus or minus 0.001, I would say there is little to no fermentation going on.     Ok I have a batch of Pinot Grigo that I started 02-13, did the raking and secondary fermentation on 03-07 so 22 days later. Now 4 days later the gravity is at 0.996. I'll wait and do another reading, we will know if there's still some fermentation going on.

    For the next batch, I'll record the gravity at start, end and then after 1-2 weeks in the bottle. That way we will know if there is still fermentation going on because the gravity will be lower at the third reading. I will also do another test with another batch with the lid loose on the bucket...

    Well in the end I finally went to the brew shop and bought some chitosan While there, I bought a pack of yeast, kieselsol and another chitosan as a backup so this will not happen again! Yeast in the fridge and the 2 other pack in closet, should have a few years of shelf-life!

    I finished my testing of bottling wine in plastic bottles and the results is too much oxidation, the wine doesn't taste that good. Drinkable but harsh. I don't recommend.     It's fermenting right now, I only lost one liter out of 7, so only 1/7th, it's not much, I don't think it will make much of a difference. Instead of 23 liters, I made a batch of around 20 liters.
