    Color question for extract brewers

    Are you using dme or lme? You can add lme at flame out, and while I've heard of people adding dme at flame out I prefer to add it with 5-15 minutes remaining in the boil to ensure that it's all dissolved.

    UPDATE: This brew has now been in the primary for 11 days, I opened it up and took the first hydrometer reading. 1.022, this is right at the top end of the finishing range of 1.010 - 1.022. I'll give it another day or two and then take another measurement when I put it on top of the cherries...

    The paper in your hydrometer is probably where it needs to be. A quick way to check if it is in the right spot is to test fresh water, if it shows that fresh water is 1.000 then it's good to go.

    You could also increase your boil volume and utilize the late extract addition method to maximize your hops utilization.
