Dry hop that baby. The week or so that you are dry hopping will give the beer time to condition as well as the time it takes to carb in the keg. No need to let it sit around any longer than necessary.
Yeah, The West side of the state has 7 breweries... Over on the east there are 5. With ours and another Sioux Falls brewery getting ready to open and a couple more in planning. So, South Dakota is getting there. This is probably the most untapped area of the country for craft beer right now...
