    dead ringer high OG

    Dry hopping in keg

    The temp depends what kind of beer it is, your beer line length and your tastes. I keep mine around 36 (various ales) and it works well for me. Having some sediment (when dry hopping in the keg) is to be expected, it'll clear out pretty quickly - and probably a bit faster if you lower the temp.

    The Dead Ringer IPA is not very hoppy at ALL. It's what I consider to be a malty IPA, and it took me awhile to appreciate it, but my guess is you'll like it as is.

    I said wtf and steeped the combined 2lb-4oz :D I'm sure it will be delish, regardless. I'll let everyone know how it turns out. This is batch #4 for me, the noob. So far every batch has been from damn good to excellent. Burp.

    I'm about to try this, but as a 5 gallon extract. I have everything on hand including 6 lb of NB's Maris Otter lme (versus 8.4 lb when all grain). One question if anyone could help, I was going to steep 1 lb of of 20L, 1 lb of 60L and 4 oz of Carafa III - but that seems like a lot of steeping...

    Is my beer ruined?

    And I just kegged my 2nd batch (my first IPA) last Wednesday. I was surprised by the terrible smell coming from the fermenter, and from the keg after racking. Very strong alcohol odor and just seemed odd and off. Then after two days it started getting way better and now it's quite good...

    I'd think I'd want to rack it as you said. Primarily so you can gauge the smell, should tell you a lot. What a strange problem.

    You can use a tea ball. I like the finer mesh/screen ones versus larger holes.

    My condolences, I imagine it's only a matter of time until it happens to me. I've started by banning any non-refrigerated fruit, and definitely bananas from my house one week before I brew. Maybe I'll get lucky.
