Ok this is basically what I was looking for! I geuss I shouldve stated this in my OP. I just want the oats for the purpose of adding mouthfeel and a little body, not any alcohol, I have enough fermentables in this recipe. So it seems like steeping oats is ok if ur just looking to add smoothness...
I like beers that usually take some time to bottle condition, so the amount of "on deck" beer far outweighs the amount of "ready to drink" beer probably 3 to 1...

NICE! taking another look at your ingredients, I would definitley leave the 2 lbs Dark Brown Sugar as is, it seems to me as whats gonna really make this a Fall/Winter beer; Slight butterscotch flavor with a mild caramel aroma and not to mention, the added alcohol content! I can so imagine...
Give it a bit more time, Its really easy to not see that vigorous activity and think "crap". I only know because I myself am about 6 months into my brew experience. It depends on the gravity, yeast strain, temp and a few other things guys on the forum will probably know.

I just placed an ingrdient order for a Root Beer Dark Brown Ale I'm brewing, I wanted to get the taste/body as close to a nice creamy mug of Root Beer as possible, so of course I decied to add oats to the recipe to get the velvety smoothness.... Im sure the forum vets know where...
