    This is my first pellicle and I used a collection of bottle dregs (3fonteinen, anchorage, crooked stave and more). So I haven't a clue what strain of Brett, LAB, or combination that caused it!

    thanks for the reply. I thought about there being more fermentables, but if thats my biggest problem, i'm okay with it. I was afraid I would be introducing something I didn't know about that would massively affect the taste. thanks again, if anyone else has input, i'd love to hear it. also...

    So we are brewing an american barleywine today. We had the mash going when the propane went out. I thought we'd be alright to extend the mash from 60 to 90 minutes while I replace our propane tank so we could heat the strike water. Well I got a flat on the way and my brew buddy had to come help...

    hey all. sorry for getting back to this so late. we ended up going with that grain bill (hopefully it doesn't end up too bad). Our propane emptied after about an hour of the boil, so we threw in an extra .5oz of amarillo and .25oz of centennial at the flameout and just ended it there. hopefully...

    Thanks for the quick reply. We're trying to get this done tonight since we are both so busy and itching for some new beer. Yah, I know its a lot of Honey Malt. Unfortunately, it was milled and mixed together before I had any say. So I can add, but not take out grain. Any other ideas?

    Question about Christmas Spice Beer!

    A few commercial examples are KY Bourbon Barrel Ale (Alltech), Schlafly Barrel Aged Imperial Stout, Founders KBS, etc. Most just take a beer the already brew, and age in it bourbon barrels to infuse the bourbon taste. Of the ones i've had, all are great.

    How is your current pipeline looking?

    I'm too poor to have a real pipeline going. I can't afford to brew more than once every two to four weeks. So my current "pipeline" goes as such: primary: Columbus IPA secondary: empty bottled: a pretty crappy coffee stout I'm hoping to brew on Wednesday. Either a Belgian Pale or nut brown.
