    Thanks for your reply! I don't think I'm going to do that since I don't want to introduce more foreign material to the environment that the yeast is in. Do you, by chance have an idea of how much of this is yeast? (how much would this stratify)

    So if I get this right, you want to pitch the yeast tomorrow? I'd just add the starter liquid to the beer. The yeast can't ferment the starter wort AND floc out in one day.

    Belle Saison temperature

    You can leave it this warm during the whole fermentatino period. The other beer will not like the higher temperatures much, but it can handle it. The belle saison yeast can take a long time to finish, so fermenting this warm is not a bad idea.

    So I would be looking at a more expensive compressor, right? I guess I'm looking into getting one second hand. Would going the route of mechanical (just via a motor) capper work and be cheaper? I don't really NEED one, so spending $200 on a pneumatic capper isn't logical for me.

    Nope. The lagering will not kill the yeast. It's only there to let the yeast drop out of suspension and make it go dormant. That way you get clearer beer. It also cleans up the taste.
