    MY EXPERIENCE with trad meads you do not need to heat the honey to kill nastys most store bought honey is heated before packaging and raw honey has a natural antibiotic in it. remember they found honey in king tut's tomb that was still good. just my 2 cents

    Mead in my future???

    my experience with unpasturiesd honey is you will get a good bit of foam at the first stage of ferment. unless you heat the honey & remove the head 1st. i've been making mead for 4 years now. a good book is ken schrams ? the complete mead maker. tom

    5 Gal Batch of Mead/Cider in 5 Gal Carboy

    if you leave enough head space (say 1/2 gal ) you'll have no problem. when fermment slow's down you can top off with water or honey or fruit puree.

    THANKS FINGERS, THATS WHAT I'M DOING. I'VE BEEN ON OTHER FORUMNS SO SEARCHING IS PART OF THE FUN. MAYBE you could point me in the right direction i'm looking for guinness recipes.
