I was thinking when adding the wort to secondary, I could put 1 gallon of water in first along with another packet of the same Wyeast in case they died off? Good idea? Bad?

Started brewing way too late in the day and at the end, I was tired but thought it went well. Gravity was a bit high (1.101) but hey, I was brewing a high gravity beer so I didn't think too hard on it.
4 days later and I realized: I forgot to add top off water! I've got a bit less...
It's been about 2 months since bottling and I think I noticed the sourness becoming less of an issue. However, that could be wishful thinking since it's still pretty sour.
Like I said, it's not undrinkable. Wouldn't an infection continue to get worse even in the bottle?

My last batch of beer was particularly sour. Not completely undrinkable, but enough so that my friends have gone on to call it my "bad batch". It's a Canadian Export LME that I bought at my local beer store.

I actually just racked my Belgian tripel today. I was going to bottle it in 3 weeks from now! Is it really worth waiting 3 months to bottle (and then another three)?
Edit: I should mention that this is only my second Belgian tripel!
I was worried about this batch ever since I found out my friends were opening up the bucket to smell the beer about 2 weeks in.
Sigh... Oh well. Making a "DO NOT OPEN!!!!" sign now for next time lol.

My Cooper's Lager has finished (my first batch ever!) and it tastes pretty good! Definitely watery, though. Needs more body and needs more head! I already have plans on how to fix this for my next batch (e.g. mixing a Cooper's malt with another malt!).
