    It's been about 2 months since bottling and I think I noticed the sourness becoming less of an issue. However, that could be wishful thinking since it's still pretty sour. Like I said, it's not undrinkable. Wouldn't an infection continue to get worse even in the bottle?

    I actually just racked my Belgian tripel today. I was going to bottle it in 3 weeks from now! Is it really worth waiting 3 months to bottle (and then another three)? Edit: I should mention that this is only my second Belgian tripel!

    Sorry to revive an old(ish) thread, but does this particular quote mean that for extract kits that come with a packet of yeast, we should be concerned about autolysis and should seconday? I ask because I bought an extract kit from my LHBS (newbie here) and it came with a packet of Cooper's yeast!
