How did German Immigrants in the mid 1800s brew lagers in Texas?

A cellar from perhaps the oldest recorded brewery in Austin was found during archaeological work for the new City Hall complex. You can get fairly low temperatures in a subterranean setting.

    Seriously reconsidering going all grain

That first one is certainly the truth. I brew on occasion with a couple of friends of mine, but they really come over to socialize, not to work. As such, I make sure that I do plenty of solo-brews to make sure I'm staying on top of everything.

How do craft/commercial brewers get their beers in stores so fast.

I'm drinking a beer right now that I brewed 3 weeks ago and bottled only one week ago. But I've had other beers that took up to four weeks in the bottle before they were good to drink. I haven't taken great notes about that aspect of my brewing, but my gut feeling is that temperature played a...

    Dogfish Head Brewery/Brewpub

When I went to the Rogue brewery in 2009, they have a restaurant upstairs of the main brewery and they have a distillery, but it is not attached to the brewery, but is in a separate building on the property. So, probably semantics.

Mash Tuns: Round coolers vs. Rectangular coolers?

Thanks for the replies. Sounds like I can't go wrong with either, since I'll be batch sparging as I have been doing with my current set up. And hey, limulus. I'm Tar Heeled as my wife and I moved from Texas so she could go to grad school at UNC. Despite being a Longhorn alum, my sports...

Mash Tuns: Round coolers vs. Rectangular coolers?

I'm going to be upgrading from my simple zap-pap tun using uninsulated buckets to a cooler system. However, I don't know what type of cooler I want to use. What would people say are the pros and cons of the tall, round coolers (eg. 10-gallon Rubbermaid) versus the lower, rectangular coolers...

Experience with Sam's Club 34-qt SS Turkey Fryer?

I have an opportunity to buy a slightly used Sam's Club (Sunjoy brand) 34 quart stainless steel turkey fryer with a 52,000 BTU propane burner for $50. I know that some on the board have purchased similar equipment from Sam's Club, and I am curious to know what people's experience has been with...

    Slow fermentation?

Revvy, I don't dispute your experience, or your effort in trying to educate others, but I want to point out your approach in dispensing information. If you think filling your posts with things like "All you gave me was "My airlock's been bubbling...." And I gave you, it could be the cat...

    Slow fermentation?

Revvy, thanks for the partial, and quite snarky, answer to my question.

    Slow fermentation?

Bloopy, bloopy, bloopy is correct. And, you're right, I don't know what's happening, that's why I'm asking. :)

    Slow fermentation?

I have noticed over the past years that sometimes I have what I would call long-lasting residual fermentations. I will have a main fermentation of 3-4 days, and then my beer will continue slowly fermenting for 2-4+ weeks. It doesn't happen with every beer, but I'd say about half. For...
