    Ok a question for you. I have about 12 more beers that were in the basement for about a year and has not been refrigerated. They are filled up to the neck. If I refrigerate them could they still"explode" upon opening?

    Thanks for all the great replies. Yes I am using Nottingham yeast and making an Irish red. Where I have the carboy it's a little chilly so I wrapped the carboy with a fermentation heater wrap.

    Hello all, I finished my 3rd brew (extract). It was a Kolsch recipe. So far this one came out the best until I opened one today. The color had been a beautiful golden, nice head, etc. The one I opened today was darker and looked almost purple. Anybody have any idea why it would of came out...

    it's been 48 hrs since I pitched the yeast. there is a 1/4" krausen ring in carboy.
