I have a 10 gallon brew pot as well and have done BIAB. It can be done but I prefer to stick to grain bills that are 10lbs or less. not because of size of pot, but more for working with over ten pounds of saturated grains is a real pain. squeezing the goodness from bag at that weight sucks.
I'm not familiar with that hop variety... have you used it before?
if not I would start with 1 oz for 5-7 days.
Alpha doesn't matter for dry hopping as its more aroma than anything else. doesn't increase IBUs, but can contribute to perception of bitterness.
3711 yeast is a beast but I have had no trouble with it having a thin mouth feel... late addition strisselspalt for sure! I don't brew my saison without it. Very interesting finish.

Black lager spruce? Their porter is sweeter... this is very dry and clean with a piney bang and not a hoppy pine... I'm thinking spruce.
