    Excess hops... help!

Hey everyone. I've got a fair amount of hops that I'm not super familiar with using together, and that I want to utilize in our house Pale and some new IPA's. Malt bass is real simple: Pale, some Munich and touch of C-45. I was wondering if anyone has suggestions on pairing these varieties...

    Curiosity killed the Grape Juice

So, I found an older winemaking kit my parents had laying around their house, but the wine yeast and various other additives were missing. I decided to take the juice (a blend of grape, cherry and blackberry) and pitch some Trappist Ale yeast. Fermentation took off for a few days and has since...

    Cream Crazy

So, I've recently crossed over to all-grain brewing and just love the cream ale style. Well, let's say I love the "American" Cream Ale style. Essential when I think cream ale I think, "Smooth, Creamy, Sweet." Not that that's the BJCP guidelines, but hey, it's an American Cream! I'll be...

    Mixing DME's

Trying to be as creative as I can with DME, what would you think about the addition of Wheat DME with a Dark or Amber DME? I've read in a lot of places about the benefit of mixing Wheat with Extra Light DME, but does the same apply with a darker blend? I heard Wheat can enhance the head on...

Cheap & Easy 10 Gallon Rubbermaid MLT Conversion

Excited to start all-grain brewing! I've been looking around for mashtun ideas and I really like this one. Question: Do you insert some sort of screen/false bottom so you don't drain all the pieces of grain out with the finished wort?

    Cocoa-oat Italian roast stout

By "jump" I was referring to the period after I add the extract where the foam rises and falls. Not sure the technical term? That's good to know though

    Cocoa-oat Italian roast stout

Quick update: brewing process went well. The "jump" process after adding the lbs of extract took awhile. I'd say we removed it from heat and let it settle about 20-25 times. She started fermenting in under 24 hrs and is now rapidly bubbling and highly active. I will admit though, despite adding...

    Straining before the primary

Any opinions on whether or not to strain the wort prior to the primary fermentation?

    Cocoa-oat Italian roast stout

Awesome, thanks! One more question while I have your attention. What do you think about mixing a dark and light extract?

    Cocoa-oat Italian roast stout

So if I do want a high finishing, or an abv of about 5.5-6% should I stick with a dark extract?
