Bought a PBR clone kit, from Brewmasters Wearhouse, for my Mom to brew. It contains 2 ½ lbs each of 2-row & 6-row, 3 lbs flaked maize, 1 oz Willamette plus the yeast. I am assuming a 60-minute single infusion mash and have a couple questions.
What temperature for the mash?

Checked batch #1 today and the krausen had dropped. The gravity is 1.010 at 56F. Racked to secondary to allow clearing as it had lots of floaters. Plan to keg it next weekend and then check batch #2.

Mine took 7 weeks to finish. SG was 1.071 and it slowed to a crawl around 1.038 - 039. The first week I had it at 88F - 90F and by week 7 was in the mid 70's. I used Wyeast 3724 and was told by Wyeast it can slow in the mid .030's if the temp isn't high enough. I am glad I waited it out as...
Update Saturday, 01/24,09.
It didn't look any worst but smelled very sour. I don't care for sour stuff so it's gone. Next batch will 1 to two weeks out. Going to do a simple APA. If it turns out well I want to do a Marzen.
My recovery plan ..
Toss air lock with blow-off tube attached, 1 gallon plastic jug (what the blow-off tube goes to), the rubber grommet on the fermentor lid.
Keep fermentor bucket, top and Thermowell stopper wash with PBW, dry in sun light, spray with StarSan solution.
