    Hmm. I think this would be difficult with the kind of stuff that brewers get in to. To get a malty flavor, you're going to be looking at extracting sugar from malted grains. Being an ex-ecig user, I can pretty much promise you that grain sugars in your tank are going to ruin your heating...

    Rehydrated Yeast sat 3 hours, still good?

    I've had problems come up during brewing that caused the yeast to sit in the rehydrating water for an hour or more, and it didn't affect the beer at all. One was a .065 OG, so I am guessing that you'll have no issues. Fermentation kicking off within 10 hours is definitely a reasonable start time...

    No secondary... so longer in primary?

    As many will also tell you, secondary is not really necessary unless you're racking on top of fruit or other flavoring, or doing a very long aging. Early in my brewing, I ruined an IPA by transferring it to secondary and oxidizing the crap out of it. Tasted like soggy, Mosaic-scented cardboard...

    Full Boil Evaporation

    Since you're doing extract brews, an extended boil is not absolutely necessary. If you find that your boil off rate is too high, adjust your hop amounts to reduce the total boil time. But yeah, sounds like you might have it boiling too vigorously.

    Yep, get one of these, or something similar: Reusable "wireless" dehumidifier I've got one in my ferm chamber, and it works great. Prior to having one of these, there was a serious stanky crud / mold problem in there during fermentations.
