    Strange Yeast/Sediment?

    I just did a 1 gallon batch using S-04 and have the same exact monster in my jug. This is my second time using s-04 and had the same thing happen on the first batch as well. It will eventually all just fall and flatten out on the bottom like you would expect.

    Wanted to say I pitched a batch a few weeks ago and its fermenting away in my basement, used Stop and Shop brand 100% apple juice. No rhino farts. Ambient temp in the basement is ~63-67 depending on how cold it is in NJ. Not sure if its the juice brand or the temp, but it smells normal.

    I figured the hydrometer was key, but I have seen a lot of posts saying how fast wheat beer is from boil to bottle to belly. Wondering if there is anything specific that makes that happen.

    Dilemma- 1 gallon vs. 2.5 gallon

    I'm in the same boat as you in that I don't have space, or haven't convinced the wife that 5 gallons is the way to go yet. Been using the 1 gal recipes from the Brooklyn Brew Shop book, so far 3 batches brewed, 2 fermenting and 1 in bottle. Tempted to get another 1 gal jug....

    I just brewed a Brooklyn kit (Everyday IPA) and decided to get rid of the C-brite as it reminded me too much of bleach. I used vodka in the airlock, seemed safer than using c-brite.
