So I can't remember where this recipe came from, but I had it written down. Let me know if it sounds like it will hold true to the style of an irish red, or if I should make some changes. I haven't brewed too many "big" beers so any help would be appreciated.

Yes it is. With a 1/2 lb more honey and 1/2 lb less extract because that's the only amounts I could buy it in. Thanks for the advice. Hope it starts going because it's tying up the fermenter!
I pitched one vial of yeast. I didn't know that you might need more when lagering. The recipe is from the book "The Complete Joy of Homebrewing" and says to expect a final gravity of 1.004 - 1.008 because of the large amount of honey. I guess I'll up the temp. to about 60. Will that give the...
I've been brewing from extract for the last couple of years and finally got a chest freezer so I can make lagers.
My first batch:
3 lbs. extra light DME
3 lbs. clover honey
2 oz. cascade hops

I have ordered many AHS kits and they all turn out great by just following the directions. Very easy. I agree that you may want to hold off on a high gravity beer until you are a few more batches into it.
I spend most of my summers surfing and fishing. I hate the winter and spend it mostly drinking beer. Love snorkeling and SCUBA diving when I can get somewhere the water is clear and warm.
This probably led to my obsession with salt water aquariums. Had several including a 75 gallon reef...
Thanks for the feedback. I guess I'll just let the recipe roll on as is. I did a pumpkin pie ale last year that turned out good that used pumpkin in the boil so this will give me a "pumpkinless" version to compare it to.
I have a pumpkin pie ale in the primary now. I did not use any actual pumpkin for the recipe, just some spices in addition to the ususal ingredients. Probably about time to transfer it to secondary, and I have been thinking that it just feels wrong to do one of these beers without using any...
