    Does anyone know a good off the shelf beer that you can culture brett from? I have access to things like anchorage brewing company and a ton of different belgium breweries. I made a saison a little while back and used the WYEAST Belgian saison strain but wanted to add a little brett funk to it...

    Noon question here, but why the 21 day primary fermentation? Is this common with ESBs or this type of yeast? Why no secondary?

    I brewed a slight variation of this last night. My local store only carries WYEAST so I used the 3638 Bavarian wht. Instead of marmalade, I boiled down 2 blood oranges and added the extract at 15 minutes (also using blood orange zest). Really excited to see how this turns out.
