    Wyeast 2352 Munich Lager II

Have you tried the finished product yet? This yeast gave me a 1.1013 beer from 1.050 as well, and I was curious if the gravity drops during lagering, or if the yeast cleans up the beer flavors any more. Mine still has another couple of weeks of lagering before it's ready to try.

    Adding water after fermentation?

When we are talking about the beer being "watered down", does this just mean that the alcohol and hops will be slightly lowered, or will the beer really have an extra "watery" quality to it that it would not have had if you boiled off less water, and put it into the fermenter as 5.5 gals?

    cold crash then add gelatin?

While we are on this topic...I have a beer that got stuck fermenting at the end so I added some dry yeast to primary to finish it out. It is now in secondary, but should I cold crash and/or use gelatin to ensure that I don't bottle a huge amount of yeast? I just want to make sure I leave...

    Chunky Yeast

I have noticed with my newest batch of beer that the yeast at the bottom of the bottles is not packing down and pelleting to the bottom of bottle, but is rather sitting and swirling around at the bottom. Even after refrigerating for one day this yeast is still not settled. When I pour the beer...

bottle conditioning weizen bock with lager yeast

style technicalities aside, my question is: if I use gelatin or pvpp or whatever to drop the ale yeast out of my beer in secondary, and then add lager yeast before bottling, is this a good idea? Am i just going to end up with way to much yeast, both ale and lager, or am I going to get a nice...

bottle conditioning weizen bock with lager yeast

I have a weizen bock sitting in the primary fermenter (sg = 1070). The yeast I used was white labs Heff IV (wlp 380 i think). I was thinking that I would put this into secondary for a few days, then cool it down and use gelatin or something to drop as much yeast out as possible. Then when I...
