    Fermentation / General Question

I like to keep a couple packets of Nottingham in the fridge for exactly this reason.

    Krausen hasn't fallen

Yeah, I'm thinking it's caused by the extra protein in the trub. I get paranoid it's a pellicle, looking forward to bottling this weekend!

    Krausen hasn't fallen

I brewed a 10 gal batch of a hoppy red ale 3 weeks ago, fermented in two buckets with wlp001 at about 68F. Just opened the buckets and one had no krausen on top, the other had about an inch of frothy krausen, looked very yeasty, but I know fermentation has stopped. Any thoughts why one of the...

    Rye Pale Recipe

I do a Rye Pale Ale with caramunich, white wheat, and 15% unmalted rye. Amarillo for Bittering and Dry Hop, Sterling for flavor/aroma. I find the spicyness of the Sterling helps bring out the spicyness of the Rye, and the amarillo contributes great juicy flavor. Step mash 20min @ 122 40min...

Is this the result of Gelatin coagulating and floating, or did I get an infection? Beer tasted/looked fine when...

Does stalled fermentation contribute any off flavors?

Sorry if this has been covered before, I did do a quick search. I know that fermenting too high causes the yeast to kick out some unpleasant off flavors, but what about the opposite? If I'm using WLP001 or Nottingham or some common ale yeast and the temp drops to the point that the...

First All Grain Bad Efficiency Means High Attenuation?

Thanks for the responses. I'll try bumping the temp up a little next time, probably get a new thermometer too just to make sure that I'm on target with the temps. I'll try to hold 153 next time.

First All Grain Bad Efficiency Means High Attenuation?

Hi HBTer's I've been lurking for quite a while and have gleaned a ton of useful and entertaining information. I finally have a legitimate question that has not (I don't think) been covered before, so I get to make my thread starting debut!! So I did my first All Grain batch, EdWort's Haus...

How many gallons of EdWort's Haus Pale Ale have been made?

5 gallons for me, my first all grain attempt and first post after lurking for several months. Thanks for all the great information!! 3350 + 5 = 3355
