Adding sugar to Belgain at higher temps

I have a Belgian strong blonde fermenting right now. Recipe called for raising the temperature to 80° and fermenting for two weeks. Recipe uses candi sugar at the end of the boil, but my LHBS suggested adding it after a few days of primary. I followed their advice, but didn't think about the...

    Got a bit warm...

I used Imperial Organic Yeasts A 07 Flagship yeast for reference. Heating element was a Fermwrap, connected to an stc1000 (fridge cut out, and the Fermwrap was free to run wild).

    Got a bit warm...

It was my temp controller /heating element that got it that hot. The bulk of the primary was about 65. Drank a full pint tonight. Still green (under two weeks, boil to glass), but it tastes pretty good. I'm not tasting strong of flavors. Good to know that I can get a beer done in a week I guess.

It tastes green, but I didn't taste anything off. It's carbonating now, but I have my fingers crossed.

    Got a bit warm...

Thanks. I force carbonate, so I don't need the yeast after fermentation. Took a reading this morning, hit my target gravity. I'm going to keg it when I get home and let y'all know how it goes.

    Got a bit warm...

So, I have had a beer (Arrogant Bastard approximation) in the fermenter for a little over a week. Went to check on it today, and saw... something wrong. Apparently something went wrong with my temp controller, and my temp was at 59°C (138°F). I haven't checked my gravity or anything, but my...

    Hello from Oregon

I've been brewing cider for several months now and I was even daring enough to try a small batch of mead. I'm planning to start my first batch of beer after the holidays, and I figured this would be a good place to hang out before I dive in too deep. :mug:
