NASTY astringent taste in my first homebrew

My first brew (a German Style Light) has an extremely potent and bitter aftertaste. Recent research has led me to suspect it comes from the fact that I knocked a bunch of the "krausen-ring" sludge back into the brew during fermentation. The beer tastes great... when you can, y'know, taste it.

    Steeping specialty grains

I just brewed up an English Brown Sunday night. I tied the open end of the muslin bag to the door handle of the microwave above the stove. It hung at the perfect height to submerge the grains and keep them from contacting any of the metal surfaces.

Went to homebrew festival, horrible off-flavor everywhere!

I think that I've tasted it too, Jimmy. My very first brew has a very, very strong bitter aftertaste that hits the back of my tongue like a punch to the face. It tastes, to me, like I bit into the green part of a carrot right before I took a sip of my beer. The beer "tastes" fine, if you can...

2nd Batch Ever!! In the fermenter...

Actually, I may end up having to keep her around for a while. We were at a restaurant called "Old Chicago" this weekend and ordered two "trips" (4 4oz. samplers of different brews from the 110 they had available). One of the samplers on the Import "trip" was Guiness Stout. She had one sip, I...

    confused!!!!

I'm pretty sure that I just bought that same book this weekend. I've earmarked the "A to Z Brown Ale" as my "on-deck" brew (the next time SWMBO actually.... y'know.... lets me brew) and there are plently more very tasty-sounding beers (Blood Orange Hefe, Pumpkin Porter, Cherry Ale, etc.) to...

2nd Batch Ever!! In the fermenter...

Not as concerned about the SWMBO's clothes.... she can be replaced. The beer, however.....

2nd Batch Ever!! In the fermenter...

Just boiled up my 2nd batch Thursday evening. It is currently burbling happily away in my "brew closet" (or, closet, as we say here in the Midwest). Brewer's Best American Amber 1 lb. Crushed Crystal 80L Malt (steeped approx. 25 min. at 150-165 degrees, I also managed to spill a good...

    Hey, Culligan Man!!!

Okay, never mind.... just got directed to a pile of previous threads on this topic that answered my question. Just goes to show that I should READ before I ask.

    Hey, Culligan Man!!!

I work just down the street from a Culligan plant. They deliver our water in 5 gallon plastic carboys. Is it worth it to go to them to see if I score some used bottles or are these of insufficient quality? The nearest "L"HBS that I've been able to find is about 85 miles away, in Galesburg...

Up and Coming Homebrewer in North-Central Illinois

Hello all. I am a brand SPANKIN' new brew enthusiast living in Princeton, IL (a town of about 7,500 that is approx. 60 miles from anywhere). Just boiled up my first "Let's-get-all-the-mistakes-out-of-the-way-on-the-first-batch" batch about 10 days ago. Was convinced that I had ruined it by...

    How did you find us?

I was looking for information on how the "Brewers Best" kits compare to the "True Brew" and others. This site came up under the heading "Brewers Best Reviews." Go figure. Am very happy I found you. Just started my VERY FIRST brew about 10 days ago and was VERY CONCERNED that I had wrecked...
