I see some people will seat the seal with 30psi. I want to do the set and forget method. My question is do you hit the keg with 30 psi then immediately release some pressure down to 10 to 12 psi (I will use the chart to figure out temp/psi) and leave it for 2 weeks?
Anyone use this? Thinking about using it to ferment with, then when its time to cold crash I will just push the button and turn it into a solid stopper. Hit link.

I could see changing the sanitizer if you have so much blow off that crud gets in to the over flow container, it would be exposed to the elements and then start to mold.
I use a No.10 on my better bottles. What is the best way to install these stoppers. When they are wet from a starsan solution they will not stay in, just keep popping out. I have used buckets in the past so this is the first time I have run into this problem.
The krausen fell to the bottom at about day 7. Have you ever put gas in a boat and spilled some in the water? It makes the water look all crazy. Looks like that but not to that extream.
