So I made a very similar recipe but sadly I added Brett-C at the end of the saison yeast fermentation and later added some additional wort from another batch to feed the Brett...I then left it for 6 months.
Guess what? No brett character (as if anyone's surprised)-just an extremely clean...
I know its been 3 years now, but is there a way to get the pictures for this instructional back up? I found them to be very informative when I made my first controller.

There are several other "noble" varietals that work well in pilsners -I think you just have to know which flavour you like. You could also skip your bittering addition in favour of a first wort addition may serve to tone down the "Saaz flavor" for you.
