I noticed several of you recommend US05 as a substitute for pacman yeast in Yooper's Dead Guy ale recipe. Wouldn't US04 bring out the malty flavors so much better in this style?
What's the implications of choosing US04 in this case?
Do you prefer one over the other? I've heard S-05 referred to as a "workhorse" yeast.
My brewing buddy has been using it for nearly everything here recently.
I've searched and searched the Fermentis site and have yet to find any sort of specific "Home Brewing Style Guidelines" for their dry yeast strains like Wyeast or White Labs has.

I noticed the White House Chef using a commercial "paddle thermometer" in his brew kettle when making up the Obama Honey Ale recipe. These type thermometers run about $10 bucks online. They look pretty sturdy, more than my old probe type thermometer.

Well I just ran another test of my kettle boiling 3 gallons of water and ended up losing about 3/4 gallon after a 60 minute boil. Looks like I'll have to swag it to determine my initial volumes for the first split boil AG batch.......****sigh****
