    My double IPA came up short on gravity. What to do?

    Have you already chilled and pitched the yeast? If so, One thing you could do is add about 3/4 pound of table sugar at high krausen. The sugars added then will contribute enough to what would have been around 1.083. So you'll end up with about the same abv.

    Whoever says Simcoe is over-rated hasn't had Weyerbacher Double Simcoe. Dangerously drinkable beer brewed with only Simcoe. Oh Mylanta is that muy bueno.     Ingredients Dilemma......

    For an O.G. 1.046 APA, I wouldn't bitter with a full 28 grams of Chinook. Maybe bitter with 14 grams for 60 minutes. Then maybe 14 gram additions of Centennial at 30, and 15. Another 14 grams at flameout? Should give you a good amount of hop flavor and aroma without too much bitterness.

    Falconer's Flight IPA Thoughts?

    Nothing wrong with ending up with a stronger brew. The IPA I brewed in the end of December had an OG 1.064 and got down to 1.008. That was with WLP001. Took a taste sample when I bottled on Tuesday and it was delicious. Hopefully yours turns out great too.

    What yeast are you using? If you're concerned that your beer will come out too sweet, similar to the one you speak of, use a yeast with high attenuation. Less residual sweetness left behind. Stuff like Wyeast 1056, White Labs WLP001 should do the job. Accentuate the hop character.

    Yeast for a Robust Porter?

    Well I used S-04 for my Robust Porter on monday. Pitched 2 packs. 1.064 OG. Down to 1.012 right meow, but it's fruity as all hell. Temps were in the low 60's the whole time. I didn't know if Porter will throw off flavors like that when it's real young, or the yeast just got away from me...
