    My question is more on timing. I've read and experienced that with BIAB, conversion happens very quickly. By the time i get my corrected mash pH readings conversion has pretty much finished. I can hit my 5.2 by making the correct additions, but is it already too late? Does pH still matter...

    Ya. The more I stew over it, the more I think I need to revisit my sparge process. I'm trying to see if I can make no sparge work. But I'm not adjusting my recipe for the loss in efficiency. I think I just need to practice sparging. Time to brew again. :D

    I guess I was hoping that beer smith would help me estimate my efficiency. I think I need to work on calculating and estimating my efficiency. The only thing I did different was stir the mash with the larger grain bill. I was hoping to keep my mash temp even.

    How did this beer turn out? I tried to add the cereal to just the secondary and I got a metallic taste from something. Just trying to figure out when and where to add the cereal for the pb flavors to come through.

    amount of fermentables

    huh - good to know on the yeast - the original recipe called for 2 packets of Safale US-05 Dry Ale Yeast - i only used one vial of pitchable dry english ale yeast. so i guess if i don't get much of a ferment this first week i may have to get more yeast to pitch. thanks all for the tips!! :)
