My question is more on timing. I've read and experienced that with BIAB, conversion happens very quickly. By the time i get my corrected mash pH readings conversion has pretty much finished. I can hit my 5.2 by making the correct additions, but is it already too late? Does pH still matter...

Ya. The more I stew over it, the more I think I need to revisit my sparge process. I'm trying to see if I can make no sparge work. But I'm not adjusting my recipe for the loss in efficiency. I think I just need to practice sparging. Time to brew again. :D

huh - good to know on the yeast - the original recipe called for 2 packets of Safale US-05 Dry Ale Yeast - i only used one vial of pitchable dry english ale yeast. so i guess if i don't get much of a ferment this first week i may have to get more yeast to pitch. thanks all for the tips!! :)

yep - recipe says it's an arrogant bastard clone - lots of hops in it too for this recipe OG 1.080 FG 1.018 IBU 98 SRM 11 ABV 8.00 so it sounds like it is possible to have all those fermentables in a 5 gallon batch? thanks
