I Have An Infection - Can I let this ride and create a sour?

Tried it once and left it for a few months. Tasted like **** and vinegar.

Wyeast left on counter over night; issue?

Use a starter just to be sure. It's worth doing anyway.

way too astringent: try to save or use it for something else?

Dump it and start over. You might be able to pitch the slurry into a new batch.

    Hop flavor lost in keg?

IMO this is because the first few pours also contain some of the liquid closest to the hops, and the later pours are the 'normal' beer you made. The bottled beers let out an initial hoppy aroma that lingers, but in the glass will likely fade. Or are you saying the hop aroma lingers even after...

Bad batches.. Help me spot the weak part of my process

What do you use to measure your grain? Is it the same vessel used for fermentation? I have had several batches go bad after dry hopping with a bag. I now throw the hops in without a bag. I have had several batches go bad because of a contaminated bucket. I threw it out and put boiled water in...

What kind of quality do I need with a boil kettle??

I have 2 kettles - one is a 10g Megapot that I love, and the other is a free/cheap aluminum 5g that I got from Northern Brewer. The difference between the two is night and day, both from a price perspective, and from a quality perspective. That said, the only issues I run into with the cheap...

IBU's affected by using Muslin bag?

Gonna be honest...I've never had a good dry hop experience with a bag. The result is either insufficient aroma, infection, or both. I've had fantastic results just dropping the hops straight in. I just make sure to cold crash prior to kegging, and end up with very little residue in the final...

    Need help cooling wort!

Make sure you are stirring in the opposite direction of the water flow. It should cool very quickly at that point.

    Lagunitas Daytime clone

Reduce crystal and consider messing with adjuncts. I have not had this beer, but their IPAs tend to be malt forward, so I'm guessing this one is too. I heard an interview with one of their brewers and he mentioned that he uses a lot of adjuncts, so in this case it could be corn or oats. You...

All of my beers taste exactly the same

Once again, unionrdr is correct. Yeast adds flavor to the beer, and if you're using the same yeast for each beer, then you're removing one of the factors that could add variety to it. DME/LME won't give you any flavor really, so you need to supplement it with adjuncts, steeping grains, or...

    This.

    My First Infection

dump it. You won't drink it, and the bottles that sit there will either explode or go wasted while you buy new bottles for the next batch.

    reallllly on the fence !!!!

Kegging for sure. However, you can easily use a 5 gallon igloo cooler with 9" false bottom and $30 tap. I sourced my own parts and built a mash tun for around 90.

    Ipa?

Yeah that looks dark. That said, unless you were planning to submit it to a competition, it doesn't matter. Looks like you used some dark malts, or steeped some dark grains. What's the grain bill?

    Blichmann therminator

I find that if I turn it to try and move the water through the coils, I'm able to get most of the water out (on either side). The rest evaporates before next use.
