What to do with a 500g yeast brick?

Here's an update haha: I've been doing a similar thing with my yeast. Put it in a clip-lock tupperware container in the fridge, and spoon out 11 or 12g each usage and immediately close the container and put it back. My yeast has yet to fail me :) So there's a cool tip, if you want to save...

    Waterproofness of this PT100

Aha, so I would perhaps need something like this then? https://www.aliexpress.com/item/USA060-Thermowell-Immersion-Sleeve-Pocket-Stainless-Steel-304-BSP-1-2-for-Max-6mm-OD-Wire/32694481280.html

    Waterproofness of this PT100

I can use this PT100 sensor in a RIMS tube right? https://www.aliexpress.com/item/High-Quality-1m-High-Temperature-Cable-PT100-RTD-with-6mm-Thread-Thermometer-Sensor-NG4S/2047168162.html By which I mean, it won't short out or leak wort everywhere.

What to do with a 500g yeast brick?

Hey guys, came 2nd in a homebrewing competition and won a 500g brick of US-05 among other things. Unfortunately I don't do 1000 litre batches (yet), so how can I make the most of this yeast? I'm going to be doing a back to back brew with 15g in each, and I'll give some to a friend who's brewing...

    That's not a bad idea.

    The Beer of Champagnes

I don't want to add too much hops before the lactobacillus (lactobacilli?) have done their job, since apparently the hop compounds kill/inhibit them. Could be interesting, maybe if I have the patience I could get my methode de champenoise on and try my hand at riddling and disgorging them.

    The Beer of Champagnes

I had a weird idea for a beer earlier today. What if there was a beer that had the fruitiness and dryness of a Saison, the acidity of a Berliner Weisse, the hop aroma of an IPA and the alcohol level of a barleywine? It'd be kind of like champagne, or at least sparkling dry white wine. Batch...

    Critique my Rye IPA please

I think the FG estimate might be a bit high, it seems like Brewtarget has a tendency to do that, although I guess a little sugar wouldn't hurt either way :)
