I have a deep freeze with a temperature controller set to 66 degrees.
i'll try the hydrometer tomorrow and see... it is still going, but much slower..

I have checked and it's dropped about 12 points on the refractometer (from 1.052 to now right at 1.040). I anticipate this should finish at or near 1.014-1.012 so it still has a long way to go.

was the path I took... extract brewing, then moved to partial mash with LME, then moved to the DME, and about a month ago did my first all-grain. Was a great experience and my first all-grain appears to have succeeded! Good luck!

find one that will ship outside your area with a cold-pack. Due to what I suspect is low turnover at the LHBS, i have started buying from one in Austin that will ship my yeast with a cold pack. Since I'm about 3 hours away, i get it the next day and have never had any issue with Wyeast...

Ok, so i'm looking for a very good lighter venue summer brew. i've been leaning toward something in the rye family or maybe a dunkelweisen, but am very much open to suggestions. I really don't want it super hoppy or malty brew, but something light on a hot (Houston) summer day..... thought?
