Strong Scotch Ale with buckwheat honey

Thank you for your response. It's the first time I use honey of any kind. What if I boil most of the buckwheat honey longer(like 30 min) and keep the final addition to 2%. Do you think the flavor would mellow? When did you add it when you brewed your dark saison? We already bought it, so we...

Strong Scotch Ale with buckwheat honey

Hi, At my university, we have a 3.5 barrels system. For the next brew, I consider brewing a strong scotch ale with buckwheat honey. I also want to make a long boil of 4 hours to get lot of kettle caramelization. I'd like your opinion on the recipe because theres lot of things I never tried in...

    TO simple?

I think it looks good, but personnally, I would switch the crystal 150 for cristal 40l since you already have special B and crystal 80. That's just me, it will probably be also very good if you keep it. As for the toasted GP, id consider toasting flaked oat instead... but again its just my...

    Help needed with accelerated schedule

I think you should be alright. The important thing is to let it finish fermentation, don't rush. If it takes more than 14 days you can always cut on cold crash time or force carb. Maybe the beer will be a little young but for an ipa it will be less noticeable. If you worry about the green taste...

    Help needed with accelerated schedule

Did you use a starter? How the fermentation is going? You should raise the temp if possible. Don't worry it'll stay clean even at 72, especially if the fermentation already started.

    Help needed with accelerated schedule

I would ferment at 68-70 and cold crash 2-3 days after Ive reach FG which should take less than 14 days. At 70 F you should be done fermenting in less than 10 days if you use a starter and have an OG around 1.050. I dont see any reason to ferment at 65, you wont get lot of ester at 70 with...

    Hot peppers ale

Thank you guys, I really appreciate your suggestions. So far I'm tempted by the jalapeno cream ale gicts suggested. However i'd like to know if anyone has ever brew a rye beer with chilis because theres a microbrewery over here called Dieu Du Ciel who brews a rye beer with black peppercorns and...

    Hot peppers ale

A friend of mine asked me to brew a hot peppers ale for his birthday which is in late february. I never put peppers in my beers and would like to try that. Any idea? I want something good and drinkable. I thought I could use rye or maybe smoked malt for this brew but Im open to any idea. I have...

    My aeration dilemma... ugh

It looks exactly like my setup and I think the price is honest. Id say go for it. For the aeration time, I havent mentionned it. I usually aerate for about 20 minutes because its about the time it takes before the foam reach the top of the carboy. But after reading this Ill probably find a way...

    My aeration dilemma... ugh

For aeration, I bought an aquarium air compressor for about 6$ and a HEPA filter and a diffusion stone on morebeer.com for about 20$. It works very well. If you choose that option, don't forget the HEPA filter My wort chiller is a 25 feet copper tube immersion chiller that I paid about 25$...
