    So is DMS dependent on the type of grains used then? I have boiled a few dubbels for 90 minutes for that exact reason, but does that process continue in a 120 minute boil?

    Hey All, Just a very general question as to why some beers are boiled for 90 or even 120 minutes as opposed to 60. Is it to only develop a more complex hop flavor or does it correlate to having a higher OG? Or is the reason something totally different?

    If the cooler holds its temperature well, you should be fine to open the lid and give it a quick stir every ten minutes or so. Can you keep a thermometer in the mash to watch the temperature? As long as you don't drop more than a few degrees you should be fine.

    I think you may have issue with your hop additions if you're trying to jam that much malt extract into such a small volume. If I remember what I've read about hop oils and alpha acids correctly, because you've got so many fermentables in the wort (cramming it all into 1.5 gallons instead of 3)...
