Interesting! Aside from the volatile compounds, though, are alpha acid extraction and protein coagulation functions of the vigorous boil or just temperature? And do those of us at altitude have to correct for poorer extraction due to lower temp boil?

Do you know how much the temp dropped during the mash? It sounds like you were using a direct fire mash tun which was probably uninsulated? You may have ended up 5-10 deg under your starting temp over an hour. Sparging with 155 would not have been enough to heat things up at the end so you...
I was planning a chai stout to brew pretty soon, this looks awesome! I had a recommendation to put 1-2 packets in secondary, any thoughts on the effects of adding the tea packets in the mash vs. other times?
Maybe this isn't the right thread for this, but why do you want a vigorous boil other than boil-off to bump your gravity? Boiling temps are only 204-205 (unknown measurement error?) for me in the mountains, anyway. With my 3500 watt induction burner, I could achieve volcanic boiling with 7.5...
Thank you CSI and everyone else for posting such great information about this recipe! I just brewed this on Oct 11 and I'm super excited to see how it turns out! In my excitement I think I misunderstood the target gravity, though. I hit pre-boil of 1.063 and boiled for 135 min to bring it up...
Sounds great! I may have to follow with part of my batch next week. I really liked the 1.09-1.02 finish in the last one, but I think I might try increasing OG and mashing higher for a slightly sweeter finish this time. Might go nicely with some coffee actually.
