Thanks Ringobob, I'll try to avoid it if i can free up a carboy. I'm planning on doing the original but with Pasteur Red for yeast (red star) and maybe change up the juice slightly (maybe 1/2 - 1 gal of something else). The only significant difference fermentation wise is going to be the yeast.
i wanna make this soon, but i have no idea when i would be able to bottle it. think this would be OK for say, a month in the primary/a few months in a carboy?
i've read that its OK to make apfelwein in a bucket, but i just want to make sure its not a problem headspace-wise if i leave this for a year or so. can i just get a quick confirmation on this? thanks.

so my goal here is to make something lower in ABV (i'm open to anything under 6.0%) since baseball is around the corner. i'd like to brew up something i can drink for a few hours and also i'd like to use some of the hops that aren't terribly well packaged (inc. 1/4 oz warrior hops...
anything i can do (besides actually brewing it) to avoid that? does it make a difference if i leave it outside all night (its 38 out right now) or leave it at room temp?
i've brewed (extract) before, so i understand i'll need to pitch the yeast, etc. i just have never been in this situation, so i didn't know if it'd be cool to leave it lying around for 24 hours.
