    If you want asmuch as you can get out of it. Rack to secondary and repitch the yeast. :-) that always gets a couple points more.

    Your fine. After 2 weeks (so long as there was a strong initial fementation) there will not be enough sugars left to make a difference in your carb. Def not enough to make a bomb ( although those can be exciting! ) I wouldn't suggest cold crashing your beer unless your kegging. It won't...

    Off topic... anyone figure out how to make the Kilkenny nitro pour on a homebrew level? I know there are other threads on this issue but they are all dead and none have solved it in my opinion. Anyway I thought it may be relevant to an irish red thread. I do belive I have solvedthis issue...

    So here is the key behind the infamous Kilkenny, home brew, nitrogen injecting, problem... :ban: Stick it in a whip cream dispenser You can buy the thing at wal-mart or canadian tire. It's for pie's or whatever. Anyway stick your homebrew in there, Charge the nitrogen ... and dispense! Enjoy!
