    UPDATE 24 hours in and I took a new reading: 1.051 with Hydrometer and 1.060 with refractometer. Which do I read? Is this my OG or just coming down to my FG?

    I should've noted that I brew small batches. This was a volume of 2.75 gallons pre boil and about 1.8 gallons post boil.     Second AG and my pre boil gravity was spot on (1.041). My post boil was 1.075. Does that make sense? If so, what is my OG when calculating ABV and how does it affect my FG which is supposed to hit 1.013.

    Honestly it was my first time with liquid yeast and I didn't use a starter. Also when I opened it it exploded and I didn't get it all in. Luckily it's a 2 gallon batch so it's not a total waste. Taste is great so it looks like I need to work on my yeast starter skills.

    I just racked my first AG Pale into the secondary and took a gravity reading. My OG was 1.044 and my current reading is 1.031! Am I stuck with a low ABV beer or is there something I can do? Either way, what would I do differently next time. On a side not the sample I took tastes delicious!

    Perfect. Maple syrup was my number one and since I live in western ny getting the real stuff is very easy. I will add to the boil. Do you think some where in the middle, say 30 min, or towards the beginning or end?
