    Sampling without a wine thief

Wondering what you use to sample without a wine thief? I have cider in variable lid tanks but don't have a wine thief. As long as I use something really well washed and sanitized, does it matter if I scoop out a sample with a ladle?

    Adding more yeast in secondary

Amazing. Thanks for the thoughts. I agree. Sometimes I wonder if I am doing more than necessary in attempts to yield a better result.

    Adding more yeast in secondary

Thanks! That is what I was wondering. Would there be enough residual yeast to eat the sugars in my fruit/juice added in secondary fermentation.

    Adding more yeast in secondary

Hi! Yes I do like the way it tastes, however, I do appreciate a higher alcohol content in my cider so I would like yeast to eat away at some of the secondary fruit/juice sugars.

    Adding more yeast in secondary

Hi, so I have been making cider for a couple years now and I usually ferment my apple juice for a couple weeks, rack into new carboys, add a second juice with a 1:3 ratio (3 being my original fermented juice) for flavor and let sit for a considerable amount of time. (mostly out of habit and...

    Adding Secondary fruits

Nice! Cherry cider sounds amazing. Do you mash the fruit and mesh bag it or juice them?

    Adding Secondary fruits

Hey everyone! I’ve been playing around for about a year now with adding second fruits to my cider (ie Raspberry juice and other juices, concentrates and fresh berries etc). I normally ferment my apples in primary as normal and add juice or fruit once I’ve moved it off the sediment into...

Length of Time in Second Fermentation

thanks for the info. Maybe I’ll have mine sit a bit longer this go around.

Length of Time in Second Fermentation

Just curious how long others leave their cider in carboy during second fermentation? I usually do 2 weeks-ish in first until the bubbles have slowed down or completely stopped then about 3-4 weeks in secondary then bottle. Do some of you leave yours for months and months? Benefits? This last...

Using 3rd grade apples in fermentation

Oh good to know! Thanks. I might try it. Cutting up everything is so annoying. I use EC1116 all the time too.

Using 3rd grade apples in fermentation

Hey everyone! First, just want to say I love this forum! Everyone is always so helpful so I thank you in advance! I have 3 large apple trees in our yard that have codling moth (a moth that buries into the apple and eats to the middle and then leaves, leaving it’s excrement through a hole on the...

    Sulphur odor

Hey! I can’t provide an answer for you but wanted to say I am also experiencing the same issue with my Perry and my current Transparent apple cider. I usually have no issues but the odd batch has the Sulphur smell and I haven’t figured out how to get rid of it. I have read on this forum that...

    Too much oxygen?

When everyone here says add sulfites, you mean like add a campden tab of something similar?

    Too much oxygen?

Hey, so I have campden tabs. You add it every time you rack? Doesn’t effect taste or anything? So if I racked last night, would it potentially help today to add it to the gallon carboys that I poured last night?
