I've brewed several batches (>10) all with a varying amount of grains and ALL of them with extract. I aspire to move to all grain once I get the equipment. I'm trying to use more and more grain as I start to make my own recipes.
My method is this -
I use a brew sock with 3-4 lbs of grains...
I've brewed about 10-15 beers in the last few years, mostly kits and modifications of existing recipes. I just built a fermentation chamber this last week to deal with the atrocious Sacramento summer heat and I'm ready to create my own custom recipe.

I did a slightly modified version of Yoopers Dead Guy Clone and got an OG of 1.066. I checked the gravity after a week and it was at 1.024, a bit high. I checked it again a week later (by now it's been fermenting for 2 weeks) and it was at 1.022. I used WLP060, the American Ale Yeast blend...
Yeah, I figured it'd be different, I just wanted to make sure that the wheat extract wouldn't make a funky tasting beer. I'm also using White Labs American Ale yeast blend. I'm pretty excited, this will be my first non-kit batch.
It's a 5 gallon recipe calling for-
4 lbs of Pale LME
4 lbs of Light DME
The DME was unavailable so I'm going to use all LME. What would happen if I used 6 lbs of pale LME with 3 lbs of wheat LME?
