    What are you fermenting in?

I've been using an 8 gallon conical for the past 10 years. It's one of those plastic deals from Minibrew. I was kind of hesitant to go with plastic but compared to the price of stainless, I couldn't justify the price to my wife lol. Anyway, it's been great all these years - easy to clean...

What I did for beer today

Moved my fermentor of Altbier back out to the garage so it could take a nice cold nap.

    Wyeast 1007

Quick update (in case anyone cares) - brought the fermentor into the house yesterday. Wort temp gradually warmed up to 67° F over the last 24 hours. Gravity dropped 9 points!! Hydro sample tastes super clean - no fruity esters. I'll leave it where it is for a couple days, then lager near...

    Wyeast 1007

It's in a conical sitting in my garage where ambient has been fluctuating between 46° F & 55° F. I took another hydro reading this morning and saw that it it hasn't dropped since yesterday. Wort temp was 49° F. I'm going to bring it into the 70° F house to see if that will get it moving. I'd...

    Wyeast 1007

Hi Folks, I just brewed up an Altbier using Wyeast 1007. Just wondering what's the lowest temp anyone has fermented with this yeast? Mine's sitting at 52° F which is 3 degrees lower than the recommended low. Anybody have experience going below 55° F? Just curious so I can have an idea what...

Water Profile - Good for Pilsner?

After brewing for 11 years, I decided it's finally time to make a pilsner. I'm pretty sure my water is good enough to make a decent pilsner, but the amount of HCO3 has me a wondering: At 33.4 ppm, will it significantly affect the mash ph? Anything else in my water profile I should be messing...

    Man, I love Apfelwein

Well, I've been keeping my eye on this thread and I finally made a cider on Friday using Tree Top from Costco and Red Star Primere Cuvee Yeast. My LHBS was out of Montrachet. Today, (Sunday), I got about three hours worth of nasty rotten egg smell but that was it. Cleared up super fast. Since...
