Wow! Thanks EVERYONE for your replies. I'm not knocking anyone for how they break or what they brew, etc. We all love beer and we all love brewing. The diversity of our tastes and processes, etc, is a GOOD THING. I lean toward simplicity in this very complex world. But, that's just me.

I'm a solo homebrewer, as their are no homebrewing clubs in the small town I live in. But I've always said the beer I make only has to meet two criteria:
1. It tastes good
2. It gives me a buzz.
I started fermentation on a Pumpkin ale on Oct. 29th. Using US05, I can of pumpkin, and 1 cup of brown sugar as the only adjuncts to 2 row malt. Usually, with US05, my airlock stops bubbling within 48 hours and fermentation usually completes within 7 to 10 days (checked by hydrometer). I'm still...
