    I don’t know if you still use this forum, but I’d love to know if you figured out how to lower/control the ABV. I’m on the same mission!

    For sure. We’ll be doing ABV testing at a TTB certified lab, along with monitoring the pH throughout the entire process, and any other monitoring required by the health dept. My current challenge is getting below and staying below .5 ABV.

    We’ve sent home batches for gas chromatography testing and came back at .6-1%. From what I understand, the levels in the Kombucha are too low for refractometers and hydrometers to accurately read. We are going commercial so we are making tweaks to the process in hopes of lowering it under .5.

    Yes, it usually has a small amount that is created by the fermentation process. To sell commercially, you need to be under .5%.

    The fermenter can hold up to 220 liters (~58 gallons). We are no where near that capacity right now but may be at some point in the future.

    We need to move Kombucha from our commercial size fermenter to food grade buckets for flavoring. The fermenters are on stands but not high enough up to let gravity take its course. We’ve read that a chugger pump may be the way to go. Would love some advice as we’ve never needed pumps until now...
