I do not do this. The few situations where I've had to, I haven't been happy with the final result. The most recent was coming back to brewing after a multi-year hiatus, and realizing that my counterflow chiller... Wasn't... Flowing, that is. So my beer got put into the fermenter and had to go...

Don't... ...leave a keg in your garage, subject to pretty much any level of crazy temperature swings, about 1/4 full of beer, for 5 1/2 years. I brewed yesterday and was getting ready to keg the previous batch so I could free up the fermenter. And holy hell what I smelled (and saw) in that...

Ahh. Got it. However, I stand by the point. Don't let a yeast like US-05 run up to 75F. You're gonna get off flavors at that temp. Pitching at 62 and then letting it ramp to 75 is a lot better than pitching at 75, IMHO. But still not optimal to let the temp run up that high.

IMHO it's temp. US-05 will produce a better beer swinging back and forth between 62 and 67 degrees than at a consistent 78 degrees.
